Archery came up last summer when I was teaching someone GURPS. I've got a chance for it coming up in my game this time around, but no one has come across that situation yet.Jousting, I'm not sure it ever came up.
We have done jousting at our table. You need robust but simple rules to make it a fun minigame. Otherwise you will avoid it like grappling.
